I have had this idea in my head for so long. Carrot cake baked oatmeal… carrot cake baked oatmeal.. I just couldn’t shake it! I typically make this simple baked oatmeal and we just switch up our toppings, but it was high time I got to experimenting with the recipe.

Before we move on, can we just say “Hello, gorgeous!” to that pour shot up there? I actually had a spare minute to get out my tripod, only to realize it wasn’t really working properly.. but somehow I got a pour shot in the midst of it all. I’m a happy food blogger today!

Carrot Cake Baked Oatmeal with Cream Cheese Topping

Food blogging is a funny thing. There’s so much that goes into each post that you guys don’t see! I’d invite you to come hang out with me here for a day to see what goes on, but I never actually know what day I’ll be working on “blog stuff.”

Take this oatmeal for instance.

The idea popped into my head months ago. I wrote it down while I was brainstorming blog ideas back in January. I finally got around to making it earlier this week. I waited until mid-day to make it so that I’d be able to photograph it in the afternoon light.. so we didn’t actually eat it for breakfast that day. I waited until the little one took her nap and the big one started his quiet time to start shooting.

I pulled our coffee table over by the window with the best light, grabbed all the toppings and tiny dishes and utensils and set up my shot. I fumbled with the tripod for a while, gave up, got my shots. I hooked up the camera to download and ate one of the servings of oatmeal from the shot. Then I started to clean up.. and ate the other one, ha! (Because, you know, one for me and one for baby. Totally logical.) I looked through the pictures quickly, then I didn’t actually get around to editing them or writing this post until a few days later. Now here we are!

Sometimes the process isn’t drawn out like that, but there’s usually something around here that gets in the way of productivity. Usually my own laziness.. or lack of natural light. 😉

Anyways, loves, this oatmeal is top notch. I’m so happy to share it with you, even if it took months for me to do it.

It’s not complicated to replicate that classic carrot cake taste. The big players are (of course) carrots, cinnamon, nutmeg if you’re feeling funky, raisins, walnuts and coconut, if you’re into it. I will say right now that I am not into pineapple in my carrot cake.. I think adding pineapple makes it more like hummingbird cake (which is also delicious, but is not carrot cake).

But let’s not forget the most important part- the cream cheese. Oh, you have got to have the cream cheese. The cream cheese makes it perfect. (Unless you are dairy-free, but you can top it with this delicious cashew cream instead!) I didn’t want to slather it with frosting (I mean, I did.. but it IS supposed to be breakfast, people), so I spun up an easy cream cheese topping in the blender and it was the best idea EVER, no joke.

You guys, this cream cheese topping.. it just kills it. The picture below explains perfectly. On the left side, you’ll see an appropriate amount of the cream cheese drizzle and toppings. On the right, the obscene amount I drowned my portion with after I took a bite. Then I took another bite and thought, “WHAT THE WHAT?! This stuff is insane!”

Maybe I’m over-reacting about oatmeal? But really, I’m obsessed.  Don’t wait too long to try this one!

Carrot Cake Baked Oatmeal with Cream Cheese Topping

Ingredients
  • 2 eggs, room temperature
  • ¼ cup maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon cinnamon
  • ½ teaspoon fresh grated nutmeg
  • ¼ cup melted coconut oil or grass-fed butter
  • ½ cup applesauce (you can substitute carrot puree for extra carrot flavor)
  • 2 medium carrots, grated (you can add more if you like)
  • 1¼ cup milk, dairy or non-dairy
  • 3 cups oats, gluten-free if necessary
  • ½ cup chopped walnuts or pecans
  • ¼ cup raisins
  • ¼ cup shredded coconut
  • For the cream cheese topping: 4 ounces cream cheese at room temperature
  • ¼ cup milk, room temperature (you may need a little more if you want the sauce thinner)
  • 1 teaspoon pure vanilla extract
  • 1-2 tablespoons raw honey or maple syrup
  • extras for serving- walnuts, raisins, shredded coconut or coconut chips, maple syrup

Instructions
  1. Coat an 8×8 or 2 quart baking dish with butter or coconut oil.
  2. In a large bowl, whisk together eggs, maple syrup, baking powder, vanilla, cinnamon, nutmeg, melted butter/coconut oil, applesauce and milk. Fold the oats, carrots nuts, raisins and coconut and combine well. Transfer the oat mixture into the baking dish and spread evenly around.
  3. To bake right away: Preheat the oven to 375 degrees. Let oat mixture sit and soak for 20-30 minutes at room temperature while the oven is preheating. Bake at 375 degrees for 30 minutes or until oatmeal is set and edges are brown.
  4. To bake later in the day or the next morning: Cover your dish tightly with plastic wrap, pressing the plastic directly on top of the oat mixture. Refrigerate overnight. In the morning, preheat oven to 375 degrees. Unwrap oatmeal and place in oven. Bake for 30 minutes or until oatmeal is set and edges are brown.
  5. To make the cream cheese topping, combine the cream cheese, milk, honey and vanilla in a blender. Blend until smooth and creamy.
  6. Serve hot with: cream cheese topping, maple syrup, raisins, walnuts and coconut.

I am a fool for this snack ball trend.

They are so good! So easy to pull together! So much better to snack on then junk food!

The one thing they don’t have going for them is a good name- Nut Balls is just awful. So is Snack Balls. Energy Balls? Nut Butter Balls? A little bit better, but not by much. I think I’ll quit before this becomes an entire post about naming snack balls. (Ugh, I even hate typing that!)

I feel a lot better about snack bites. My mood is changing already!

I found this lovely recipe at The Gracious Pantry and of course I junked it up with more nut butters and extra seeds and things. I couldn’t resist! They just needed to be rolled in something.

I have to admit, though, that I actually like the plain ones better. The sesame seeds get stuck in my teeth (awesome mental picture of me happening right now, you’re welcome). Don’t let that stop you now, both taste great- you could roll them in shredded coconut, too, if you’re more into that.

I think these will keep in the fridge or freezer for quite a while, but I can’t tell you from experience. They go fast in this house. Last night, I pulled some out for the family to taste test and the kids full-on grabbed them from my hands and devoured them, then looked at me like rabid dogs until I brought out a few more. My one-year-old daughter literally shoved a whole one into her mouth without a second thought. It was like watching a snake swallow an egg or something, I couldn’t look away. My advice is to make these after your kids go to bed and hide them in the back of your freezer if you ever want to taste them. Just sayin’.

(Disclaimer- She didn’t actually swallow it whole, she did chew.. I would not stand idly by and watch her choke, I promise.)

Oh, and they’re called spiced nut butter balls because there are spices in there! Cinnamon, nutmeg, ginger, allspice, cloves, the whole gang. Even orange zest joins the party. As usual, you can take them or leave them, whatever your preference. I think it’s fun to eat these so-called cold-weather spices all year long, but if it’s not your thing, that’s cool, too. Just don’t wait until fall to make these- they taste great right now. (Just ask my kids.)

Spiced Nut Butter Balls

Ingredients
  • 1¼ cups almond meal
  • ¾ cup nut butter (I use ¼ cup almond butter, ¼ cup sunflower seed butter and ¼ cup tahini/sesame paste)
  • ¼ cup chia seeds or sesame seeds (or a mix of both)
  • ¼ cup plus 2 tablespoons maple syrup
  • 1 teaspoon vanilla
  • Zest of ½ large orange
  • ½ cup dried cranberries (sweetened with fruit juice if you can find them that way)
  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon allspice
  • ¼ cup shredded coconut or almond meal (optional)
  • sesame seeds or shredded coconut, for rolling

Instructions
  1. Combine almond meal, nut butter, chia or sesame seeds, maple syrup, vanilla, orange zest, dried cranberries and spices in large bowl and mix well. If the mixture seems too wet, add the additional shredded coconut or almond meal until you have a firm dough to roll.
  2. Form into balls. Roll them in sesame seeds if you like.
  3. Place balls on a parchment lined cookie sheet and place in the freezer for at least 2 hours.
  4. Store in the refrigerator or freezer in an airtight container.

Let me take you back for a second- imagine it’s Halloween in the early 90s. I’m probably dressed as a black cat (it was my thing). I come home with a pillowcase full of candy and start my sorting ritual with my mom. I would hoard the peanut butter cups and Hershey bars, and I would hand over the Mounds and Almond Joys directly to my mom. Who would want to eat something horrible like coconut?? Not early 90s me, that’s for sure. Wouldn’t get near the stuff.

But now.. coconut and I are BFFs. I couldn’t make it through the day without some coconut oil, coconut butter, coconut chips, you name it. And add some chocolate? I am puddy in your hands.

Dark Chocolate Coconut Bites

Ingredients
  • 1¼ cup shredded (desiccated) coconut
  • ¼ cup melted coconut oil
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 4 ounces dark chocolate
  • 2 tablespoons coconut oil
  • thick cut coconut, almonds or pecans for garnish

Instructions
  1. In a medium bowl, mix coconut, coconut oil, honey or maple syrup and vanilla extract. Press into mini muffin tins (should make 12-16 bites). Let cool in the freezer for 30 minutes.
  2. While the coconut cools, melt the dark chocolate and coconut oil. Spoon the chocolate into the molds over top of the coconut mixture. Top with the coconut or nuts and freeze again until firm. Keep frozen. When you’re ready to eat, let cool for a few minutes and then enjoy.

Hello Oven Lovers!  I’m Joy, guest posting today for my sweet friend, Natalie!  I enjoy freezer cooking, how about you?  I’m here to give you some super simple summer ideas for freezer cooking.

One of the easiest ways to start freezer cooking it to use a marinade.  When you freeze fresh meat with a marinade, it starts marinating as it freezes.  Then, when you are ready to use it, toss in the fridge the day before and it marinates as it thaws.  So simple!

I love that marinated meats are usually cooked on the grill or in the slow cooker.  My house doesn’t get heated up this way. When preparing a meat and marinade recipe, I like to follow this plan:

  1. Mix up all the marinades I will be using.
  2. Label the freezer bags I will be using with name of recipe, date, and reheating instructions.
  3. Divide up the meat between the freezer bags.
  4. Divide up the marinade between freezer bags.
  5. Seal and freeze flat.
One of the benefits of this type of freezer cooking is that you can make up several meals in a short amount of time.  Another benefit is that you can control the serving size.  For instance, many marinade recipes call for four to six chicken breasts.  While our kids are still young, we only need two or three chicken breasts per meal.  So, for ONE marinade recipe, I divide it between TWO bags for two meals.  That’s also saving me money!
A few of my favorite freezer marinades:
  • Use a bottle of Italian dressing (I like Seven Seas Viva Italian by Kraft.) Grilled chicken tastes great in Italian dressing- it’s especially tasty on salads.
  • We really enjoy the homemade Teriyaki marinade recipe in Mary Beth Lagerborg’s Once a Month Cooking, however it suggests baking, not grilling.  I think Teriyaki flavors would also be good for pork kabobs or some cuts of beef. (Here is a similar Teriyaki recipe from Once A Month Mom.)
  • This garlic balsamic marinade recipe comes from Once a Month Mom.  It is delicious and the pork cooks so moist when grilled. The flavors would be great on chicken, too.
  • We also like marinating steaks or London Broil in Worcestershire sauce. So simple and so tasty.

Greek- Inspired Slow Cooker Chicken

Ingredients
  • 1 Lemon, Juiced
  • 4 Garlic Cloves, Minced
  • ¼ Cup Olive Oil
  • ½ Cup White Wine
  • ¼ Cup Chicken Broth
  • 1 tsp Dill
  • 1 tsp Rosemary
  • 1 Tbsp Balsamic Vinegar
  • ¼ tsp Pepper
  • ½ tsp Salt
  • 1 Whole Chicken, Broken into it’s Respective Pieces (Or 4 chicken breasts or thighs. If you’re using chicken breasts, they will likely fall apart because they get so tender- that’s why the chicken above looks shredded and the one in Mommie Cooks’ post is not.)
  • Egg noodles, black olives and Feta cheese for serving

Instructions
  1. Add all the ingredients with the exception of the chicken to the marinade.
  2. Mix up well.
  3. Add in the chicken and coat all the pieces completely.
  4. *If freezing, freeze now. You can put it directly from the freezer to the slow cooker, just add about 2 hours to the cooking time.*
  5. Cook on low for 6 to 8 hours or on high for 4 to 6 hours.
  6. Serve over noodles with sauce from the slow cooker spooned over the noodles and a little feta and olives for good measure.

Long day at work? Rough day with the kids? Hot outside? Just really need a drink?
These little margaritas are just the ticket.
Good, cold, relaxing things come in small, glass, ready-made packages.
I love this recipe! I love that you can make these hours, days or even weeks ahead of your next big party. I love that they are ready to drink just minutes after you pull them out of the freezer. And I really love that I have a few single serve margaritas left waiting for the next time a margarita mood strikes. No need to pull out the blender for just one drink. And no awkward shouting to your guests over a loud blender while you’re entertaining. Bonus!
 Do not be fooled by their size- these margaritas pack a punch! Feel free to reduce the amount of alcohol to your liking- there’s around a shot and a half in each of these drinks (10 oz total alcohol goes into 6-7 drinks).
My Cinco de Mayo guests enjoyed the mango and raspberry flavors, but I am dying to try out some other fresh fruit combinations. I’m thinking blackberry, watermelon, blood orange.. almost any fruit will do. This recipe is great for big groups and for small groups- you can easily multiply it and freeze ahead for a crowd; or you can make a batch for one or two people, drink a few fresh, and then freeze the rest for later.
Give yourself a break and add this to your list of must-make summer drinks.

Make Ahead Frozen Mango Margaritas

Ingredients
  • 1 mango, cored, peeled and chopped
  • 1 12 oz. can of frozen limeade concentrate
  • 1 cup tequila
  • ¼ cup triple sec
  • juice of 1 lime
  • 3-5 cups ice
  • lime slices and coarse salt, for serving

Instructions
  1. Combine chopped mango, limeade concentrate, tequila, triple sec and lime juice in a blender. Blend until smooth. Add ice until the blender is full. Blend until smooth.
  2. Pour into small mason jars, screw on lids and freeze.
  3. When you’re ready to serve, remove the margaritas from the freezer. If you’re using salt, dip the rim into the salt first, then use a straw or fork to stir up the margarita mixture. Add a lime slice and serve.

Did you guys know you can freeze mashed potatoes??
Pretty awesome revelation.
I usually don’t make mashed potatoes on a week night because it seems like too much effort. It’s not really that difficult, but boiling pots of potatoes (that often boil over) and needy children don’t mix. So I save it for a time where I’ve got a ton of potatoes or a ton of people to feed. This time, I had a ton of potatoes but no people, so I decided to try freezing them. I actually like the reheated version just as much as the original potatoes! And I love that there is virtually no work involved on the day you serve them.
 
Don’t you just love those beautiful pools of butter?

Freezer Mashed Potatoes

If you don’t already have a favorite mashed potato recipe, here’s my basic mashed potato procedure: You can make mashed potatoes with any amount of potatoes and whatever you have in your pantry. Start by peeling your potatoes and cutting them into cubes. Pour cold water over them in a stock pot until they are just covered. Add salt and bring to a boil. Boil until the potatoes are fork tender (check them at 10 minutes and then every 5 minutes after until they reach that point). Drain and mash the potatoes. Add your liquid- milk, cream, sour cream, yogurt, stock, etc– and your fat- butter, olive oil, coconut oil, bacon fat, whatever– until you get to your desired consistency. You can also add some cheese- cream cheese, parmesan, goat cheese, brie, cheddar, I could go on– and some seasoning- herbs, minced garlic– make them what you want.

To freeze, let them cool and then freeze flat in zipped freezer bags. Then you’re ready to reheat!

Ingredients

  • 1 batch of your favorite mashed potatoes from frozen, thawed (place in the refrigerator the night before for best results)
  • 1-2 tablespoons butter, cut into small cubes
  • salt and pepper to taste

Directions

  1. Preheat the oven to 350 degrees.
  2. Spread the mashed potatoes into a baking dish with a spatula. Dot the top of the potatoes with the cubes of butter and sprinkle with salt and pepper.
  3. Bake in the oven until butter is melted and the potatoes are just turning golden around the edges (cover with foil if they start browning too quick). Serve warm.

Let’s start this with a .. YUM.
Reasons to try this recipe: It’s full of healthy greens. 
Dark, beautiful, curly kale and a little family-friendly broccoli. I like greens on their own, but when you add pasta and cheese? That’s a win.

It’s freezable.
I made the full recipe; baking up half of it for our meal and freezing half of it for a future dinner. I love that I only had to cook once, but I get to eat it twice (and not as leftovers).
 
It’s tasty.

Big bites of pasta, creamy ricotta cheese, perfectly moist chicken and dark, flavorful greens.  Pair it with a salad and you can feel great about what you’re feeding your family.This is a solid weeknight meal- try it soon.
(And do not fear the kale! It’s your body’s best friend, I swear.)

 

Chicken, Kale and Broccoli Casserole

  • ¾ lb. large or jumbo pasta shells
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 garlic cloves, minced or pressed
  • 1 bunch kale, stems and ribs removed, coarsely chopped
  • 1 head broccoli, chopped into florets
  • 2 cups cooked chicken, shredded or chopped
  • 1 large container ricotta cheese
  • zest of 1 lemon
  • ¾ cup grated Parmesan cheese

Instructions
  1. Preheat oven to 350 degrees. In a large pot of boiling salted water, cook pasta according to package instructions. Drain; return to pot. In a large skillet, heat olive oil over medium-high. Add onion and garlic; cook until onion is beginning to soften, 4 minutes. Add kale and broccoli, cover, and cook until almost tender, about 5 minutes. Transfer to pot with pasta.
  2. Stir in chicken, ricotta, lemon zest, and ½ cup Parmesan; season with salt and pepper. Transfer mixture to a 9-by-13-inch baking dish; top with ¼ cup Parmesan. Bake until top is golden, 30 minutes.
  3. To freeze: Cook pasta al dente according to package instructions. Drain and rinse with cold water; return to the pot. In a large skillet, heat olive oil over medium-high. Add onion and garlic; cook until onion is beginning to soften, 4 minutes. Add kale and broccoli, cover, and cook until almost tender, about 5 minutes. Transfer to pot with pasta. Stir in chicken, ricotta, lemon zest, and ½ cup Parmesan; season with salt and pepper. Transfer mixture to a 9-by-13-inch disposable baking dish (or two 8-by-8-inch baking dishes); top with ¼ cup Parmesan. Let cool to room temperature, cover with aluminum foil and freeze.
  4. To reheat from frozen: Bake casserole (straight from the freezer) at 350 degrees for 60-90 minutes or until completely warmed through, removing the foil for the last 20 minutes of baking. You can also thaw in the fridge the day before and bake at 350 for 30-45 minutes.

Oh, how the times have changed.
If you told me five years ago that I’d be recommending that you eat beets in any form, I would have laughed in your face. But here I am, about to tell you why you need to make beet pancakes- and soon.
This weekend, I had my first experience cooking with beets. Hubs brought home four beets for me from our farmer (Hilton) and I knew it was time to experiment. Is it weird that I am not ready to eat a plain roasted beet, and that I’d rather put it in a pancake first? Weird or not, that’s what I did. I roasted those babies up, trimmed and pureed them (all with GLOVED hands, which I highly recommend unless you want stained beet fingers), and mixed them up into my batter.
The verdict? Sweet and delicious. Hubs thought they could use a little extra syrup, but I didn’t think the earthiness of the beets came on too strong. The little guy enjoyed them, too (that means he actually took a few bites and didn’t run the other way asking for M-I-L-K).
If you’re new to beets, too, I would encourage you to start with this recipe. It’s a fairly safe introduction into the world of beets. Some day soon, I hope to face my fears and actually eat a beet on its own.. but until then, I’ll be sitting down to a plate of these sweet, pink cakes.
P.S. Like most pancake recipes, these are freezable!
Sweet Beet Pancakes

Ingredients
  • 1 Cup All Purpose Flour
  • ¾ Cup Whole Wheat Flour
  • 3 Tbsp Light Brown Sugar
  • 1 Tbsp Baking Powder
  • ½ Tsp Kosher Salt
  • 2 Medium Beets, roasted & pureed (about ¾ Cups)
  • 1¼ Cup Milk
  • ⅓ Cup Plain Greek Yogurt
  • 1 Large Egg
  • 3 Tbsp Melted butter or coconut oil
  • 1 Tsp Vanilla extract

Instructions
  1. Sift the first 5 ingredients into a bowl.
  2. Place the rest of the wet ingredients in a separate bowl and whisk thoroughly to combine.
  3. Add the dry ingredients into the wet and stir until just combined (you don’t want to overstir the batter — some lumps are good).
  4. Drop about 2 tbsp of the pancake mixture onto a greased griddle or pan over medium heat and cook for 3 minutes on each side.
  5. Serve with desired accompaniments- butter, syrup, honey or jam.
  6. To freeze: Place the pancakes in labeled zipper bags and freeze for up to 3 months.

I am very excited to share this idea with you today! If you are looking to streamline your morning routine or looking for a quick and healthy mini-meal or snack for the kids, pay attention! This is a good one.
I was inspired to make these frozen smoothie bags by The Tidy Nest‘s make-ahead freezer smoothies and Muffin Tin Mania‘s green smoothie cups. I love having ready-made smoothies waiting in the freezer instead of pulling out tons of ingredients and making a big mess. All you need to do is empty the contents of your bag into a blender and add juice or milk until you reach your desired consistency. Easy and healthy- a win/win.
The green smoothie cubes are my favorites (you’ll find the procedure for freezing yogurt and the green cube recipe at the end of the post). If you haven’t been brave enough to try a green smoothie yet, I assure you that the greens give each smoothie a healthy punch without changing the flavor. It’s a great way to add greens to your diet if you or your kids* don’t typically enjoy their taste.
*Kid Tip- if your kids won’t touch anything green in color, put one of these smoothies in a cup with a lid where the color is undetectable and they’ll never know the difference! I also recommend these Sili Squeeze containers if your kids like the disposable squeeze pouches- I fill them up with smoothies and my little guy loves it.
Here are a few of the smoothie bag combinations that I like to have on hand.
 Tropical Smoothie Bag:
pineapple, mango, banana and yogurt cubes. add orange juice or coconut milk.
(if you omit the mango and use coconut milk, you’ve got a Pina Colada bag!)
 Green Smoothie Bag:
kiwi, pineapple, banana, green cubes and yogurt cubes. add white grape juice or milk.
(you can also add other green items- celery, green apple, etc.)
 Mango Berry Smoothie Bag:
strawberries, raspberries, mango, green cube and yogurt cubes. add orange juice or milk.
Here are a few other ideas for smoothie combinations:
Mixed Berry Smoothie Bag: strawberries, raspberries, blueberries and/or blackberries and yogurt cubes. add pomegranate juice.
Orange Strawberry Banana Smoothie Bag: strawberries, bananas and yogurt cubes. add orange juice.
Blue Banana Smoothie Bag: blueberries, bananas and yogurt cubes. add pomegranate juice.
If you’re wondering how much of each item to add to your bag, don’t worry too much about it. Each of my bags has about 1-2 cups of fruit, a few yogurt cubes (depending on the size) and 1-2 green cubes. The amount of smoothie that you get with each bag will vary anyways, depending on how much liquid you add, so don’t worry about exact measurements. Just have fun with it!
*Note: If you’re wondering what mold I used to get the bigger yogurt cubes, I use these Beaba freezer trays. These are excellent for freezing purees of any kind, especially if you want a larger portion than what you can get with an ice cube tray. The little heart cubes are made using a heart mold from the $1 section at Target and the green cubes are made with a silicone mini-muffin tray like this one.

Procedure for Freezing Fresh Fruit:
Wash fruit well and pat dry. Cut off any unwanted skins or stems. Chop into small slices or pieces and place on a baking sheet. Do not allow the fruit pieces to touch each other. Freeze until firm. Remove from the baking sheet and place in a freezer-safe plastic bag and store in the freezer.
 
Procedure for Freezing Yogurt:
Spoon or pour yogurt into a mini-muffin tin, ice cube tray or flexible silicone mold. Freeze until firm. Let sit at room temperature for a few minutes and remove from the mold (try to avoid running hot water over the mold, it can melt the yogurt). Place in a freezer-safe plastic bag and store in the freezer.

Green Smoothie Cubes

Ingredients:

  • leafy greens of your choice- spinach, kale, swiss chard, etc
  • liquid of your choice- yogurt, milk, juice or water

In the bowl of a food processor or blender, combine the greens and liquid. Process until smooth, adding extra yogurt or liquid as needed. Spoon or pour the green mixture into a mini-muffin tin, ice cube tray or flexible silicone mold. Freeze until firm. Let sit at room temperature for a few minutes and remove from the mold (try to avoid running hot water over the mold, it can melt the mixture). Place in a freezer-safe plastic bag and store in the freezer.

I know Natalie from my days of living in Georgia, and as much as I love living my new digs in Italy, I miss seeing her face almost every day and getting to taste all the delicious creations she makes in the kitchen.
 I’m thrilled she asked me to pinch-hit for her while she soaks up some quality time with her new bundle of joy, Lucy, but I have to be honest: she left me with some very large oven mitts to fill; Natalie simply rocks in the kitchen. I wracked my brain figuring out what to share with you, but then, as I made this dish for the umpteenth time, I realized it would be perfect.
 This is what I’d take over to her family one night if I still lived near her so she wouldn’t have to worry about dinner. It’s actually what I’ve been taking to all the new parents out here—it turns out Italy is the place to have babies.
 This Chicken Parm Bake is unbelievably easy and so delicious that I almost don’t want to let the secret out. I love that there’s virtually nothing to clean up, it can be put together in no time, and even though it’s baked it has more flavor than some chicken parms I’ve tasted in restaurants. True story.
Truth be told, you can guestimate and just wing-it with the measurements (enough oil to cover the bottom, half a jar of sauce, plenty of cheese to please, etc.), and if I’m making it for someone else I use a foil container so it can go straight from the oven over to their house.

 

Chicken Parm Bake

Ingredients
  • 1 pound chicken breast, chopped in bite-sized pieces (can use whole tenderloins if you want to make it even easier)
  • ½—1 Tbs olive oil
  • 2 or 3 garlic cloves minced
  • ¼ tsp red pepper flakes (optional)
  • salt and pepper to taste
  • 2 cups favorite pasta sauce (about half a jar)
  • 5-10 basil leaves, julienned (or ½ teaspoon dried basil)
  • 8 ounces shredded mozzarella (divided)
  • 4 ounces Parmesan (divided)
  • 5-ounces package, croutons

Instructions
  1. Preheat oven to 350F (180C). In a casserole dish (square, small size, or even individual dishes), mix olive oil, crushed garlic and red pepper flakes; spread mixture around to bottom of the dish. Place chicken on top of oil; sprinkle with salt and pepper.
  2. Pour marinara sauce over chicken; spread evenly to cover. Sprinkle chopped basil over sauce. Cover sauce with ¾ of the cheese (mozzarella and Parmesan).
  3. Next, cover every nook and cranny with croutons. Steal one crouton, eat it, and enjoy. Sprinkle the rest of the cheese over the croutons.
  4. Bake, uncovered, for about 30 minutes or until cheese is golden brown and starts to bubble and meat reaches an internal temperature of 155 degrees. (If meat isn’t fully cooked yet—usually if you’re cooking them frozen or whole, cover with foil and continue cooking until meat is cooked.)
