I will forever confuse you with Memorial Day, but I am always glad when you come around. Four day weekend for military families, what what!

We are headed up to the family cabin with my parents and my brother’s fam, so there won’t be much action on the blog until next week sometime. I’m going on my usual holiday hiatus. You know how I roll.

I’m not sure how much cooking I’ll be doing this weekend.. a break sounds mighty nice. I may just sit back and wait for someone else to take over. But.. if I was cooking… I’d be making some of this goodness to stuff in my face.

I’m thinking Patriotic Pancake Stacks for sure, because you gotta give it up to America at your first meal. (See also: whipped cream for breakfast). The fat almond pancake (above) is a crowd pleaser, too.

Some kind of popsicle.. I loved these mango swirl pops and I want more.

One of these 16 summer chicken recipes. Because, GAHH they all look so good.

For drinks, it’s a toss up between Sweet Sunset Cooler (above) and Quick Blackberry Thyme Lemonade. Both, you say? Okay. Let’s do that.

Of course, if you want to talk main dishes, we can’t forget the Crockpot BBQ Ribs. With a side of Grilled Corn with Garlic Herb Butter. And then an End of Summer Chopped Salad (above) with the leftover corn the next day.

We might also need some mint cookies and cream ice cream.. or chocolate covered cheesecake bites? Or a giant skillet cookie. Your choice.

Are you guys feeling neglected? I know I’ve been doing a lot of work over on Modern Parents Messy Kids lately- it just ended up that a bunch of my posts were happening around the same time of the month. I’m sharing the links for all the salad recipes pictured above over there today, so if you’re in need of some salad inspiration- click on over.

If you’re wondering what’s new with me, I am waist-deep in preparation to begin the GAPS Intro Diet to begin healing my stomach. I have been stockpiling meat, chopping and freezing veggies and making broth like nobody’s business. I am just waiting on a few more things (mainly beef tallow from a local farmer) and then I’ll be ready to begin. I plan on sharing my journey, tips and any recipes I find useful along the way. I think it will be essential for my healing process to document things here, and maybe it will be helpful to some of you as well.

Any encouragement you have to share about healing through diet is welcomed! I will surely be drawing strength from the Lord to get through the introduction stages- it will be nothing short of a miracle if I make it through without sabotaging myself (i.e. eating handfuls of chocolate chips during nap time). Thanks for sticking with me while I work through this health issue- it means a lot to know that I am not alone!

Fall 2012 is here!
Let’s just say my jeans are happy to be worn, my tea cups are happy to be full.
My scarves and boots are waiting in the wings (it is Georgia, after all).
It’s not really cold here yet, but I’ve wasted no time stockpiling pumpkins, squash, pecans and apples. We’ve also got a pumpkin/squash patch taking over our yard- can’t wait to see what we get!

They are a such a refreshing treat in these dog days- I can’t get enough of them!
Here are some popsicles that are on my list.
(I would substitute yogurt for the ice cream.)
You can pick up cheap popsicle molds from Target, Wal-Mart or your local kitchen supply store. There are tons available online, too. If you want to go old school, some Dixie cups and popsicle sticks will do the trick. I don’t know about you, but I can’t wait to try some of these flavor combinations!
