thanks natalie for the yummy recipe. they turned out fabulous. mine looked more like the traditional round and flatter version. i made a slight change. i used oatmeal instead of flour. i just ground up my oatmeal in my vitamix, and added the rest of my ingredients and mixed. i stirred in my chocolate chips in the end. i loved the sea salt. but think i’ll drop the honey amount to 1/3 cup next time. and there will be a next time. the kids loved them.

You could use another oil, certainly. I would stay away from canola and similar oils (they go rancid quickly) and stick to cold-pressed extra virgin olive oil. You could also use melted butter.

My boyfriend found your blog a few nights ago, to see how to make green bean & ham soup. Coconut oil? I thought that was a cholesterol no-no. Can another oil be substituted. I’d not like to have to buy it for 3T.
