Oh hey, 2014!

How’s week one of the new year going for everyone? We are in hibernation mode here in Ohio, which has given me lots of time to reflect on what to do with my time in the next 12 months (or rather the next 5 months, since new babies have a way of shifting your priorities).

To help me get my head on straight, I have been going through Lara Casey‘s Make It Happen series; it’s a goal-setting series that I absolutely recommend. Especially if you’re like me, AKA you have a huge desire to get your act together for the new year but have no idea where to start. I’ve got a lot of ideas swimming around in this head and Make It Happen has helped me to organize it all. So, yay, new year! And hooray for a new recipe today! Finally got off my duff and picked up my camera.

This soup was inspired by a lovely lunch I had with my friend Jillian (see how awesome she is below) at Wheat Penny here in Dayton. We sampled a little cup of their curried carrot soup to start our meal; it was grand. I love that curry powder gives such a distinct, comforting taste but doesn’t make things too spicy. For my at-home version, I used all the orange veggies we had on hand- carrots, butternut squash and sweet potato. Pumpkin would also work well; you can use what you have in any combination.

This soup works for a whole variety of diets and is almost impossible to mess up. It would be great with some crumbled bacon on top, or even some homemade croutons. You could kick up the spice by adding some thai red curry paste, too.

And beyond tasting good, this soup has great nutritional benefits:

  • Healthy, filling fats
  • Cold/Flu-fighting onions, garlic and turmeric
  • Orange veggies filled with Vitamin A to boost the immune system
  • Bone broth; rich in gelatin, vitamins and minerals and anti-inflammatory

Curried Winter Soup with Carrot, Sweet Potato and Butternut Squash

Ingredients
  • a few tablespoons quality fat (grass-fed butter, ghee, coconut oil, lard, tallow)
  • 2 medium onions, diced
  • 2 garlic cloves, minced (optional)
  • 2 teaspoons sea salt
  • ½-1 teaspoon fresh cracked pepper
  • 2 tablespoons curry powder
  • 1 tablespoon turmeric (optional)
  • 6-8 carrots, peeled and chopped
  • 1 large butternut squash; peeled, seeded and chopped
  • 1 large sweet potato, peeled and chopped (you can substitute more carrots or squash if you’re on GAPS or avoiding starches)
  • 4-6 cups of bone broth (enough to cover the veggies in the pot)
  • plain whole milk yogurt, for serving (optional, you can substitute full-fat coconut milk if you’re dairy-free)

Instructions
  1. In a large stockpot or dutch oven, melt down the fat. Add the onions and garlic and saute until they begin to soften. Add the spices and let cook a few more minutes.
  2. Add the carrots, squash and sweet potato to the pot, followed by the bone broth. Add enough broth to cover all of the vegetables. Bring it all to a boil.
  3. Reduce to a simmer and cook until the vegetables are fork-tender, about 20-30 minutes. When the veggies are soft, use an immersion blender to blend the soup until smooth.
  4. Serve warm with a generous drizzle of yogurt.

I miss you guys! What’s happening? What’s new? How’s your pumpkin carving/Halloween costuming/PSL consumption going this year?

We are a bit of a Halloween-neutral family. We will dress up if there’s a party to go to, take the kids trick-or-treating, buy a few pumpkins and hit the fall festival scene, but we don’t love Halloween. We like it just fine, but it’s not our favorite holiday. I am always last minute with the costumes and the candy and what not. This year E had planned on being a ghost (BEST DIY COSTUME EVER, SCORE!) but changed his mind and now wants to be a plane (!!?!?! How do I make that!?!) So now the plan is make a cardboard plane, and then little L can go along and dress as a cloud. We’ll see if this plan actually goes forward.

Making these cheesecake bites provided me the perfect opportunity to continue procrastinating on the costumes this week. There was a last minute opportunity to bring a dessert to our house church and I wanted to make something pumpkin-y, but not TOO pumpkin-y, if you know what I mean. Dessert spreads can really be pumpkin overkill this time of year.

The first thing that came to mind was to pumpkin-ize this old recipe for chocolate-covered cheesecake bites. I remember really loving them the first time around and I thought they’d be a great bite-size party treat. I tweaked the recipe a bit and everything turned out perfectly. I love when that happens!

If you are grain-free or gluten-free, you can still make this recipe. Try Carrie’s grain-free graham crackers or  Shauna’s gluten-free graham crackers. If you are dairy-free/vegan/paleo, I feel for you, I love you, but this one’s not gonna work for you. BUT, behold these amazing-looking vegan pumpkin cheesecake pops! They look very similar and would totally work for you, yay! Everyone’s tummies are happy.

Pumpkin Cheesecake Bites

Ingredients
  • 1 cup graham cracker crumbs (regular, gluten-free or grain-free as needed)
  • 1 stick butter, melted and cooled
  • 8 oz cream cheese, at room temperature
  • 5 oz mascarpone cheese, at room temperature (substitute more cream cheese here if you prefer)
  • ½ cup granulated sugar (I used coconut sugar, you could use date sugar as well)
  • ½ cup plain yogurt or sour cream
  • ½ cup pumpkin puree
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 16 ounces chocolate for melting (refined-sugar free, if necessary)
  • 4 tablespoons coconut oil
  • more crushed graham crackers, for topping

Instructions
  1. Preheat the oven to 350 degrees. Line an 8×8 square baking dish with foil and grease with butter or non-stick spray.
  2. To make the crust: Combine graham cracker crumbs and butter in a small dish. Press mixture evenly into your pan and bake 8-12 minutes, or until light golden and fragrant.
  3. Reduce oven heat to 325 degrees.
  4. To make the filling: Beat cream cheese, mascarpone (if using) and sugar with an electric mixer until smooth, 2-3 minutes. Add in yogurt/sour cream, pumpkin, eggs, vanilla, cinnamon and nutmeg and beat until just combined. Pour mixture over the crust and bake 35-40 minutes or until the cheesecake is slightly puffed and the center is set. Cool to room temperature on a wire rack.
  5. Refrigerate until chilled (about 2 hours) then place in the freezer, 8 hours or overnight.
  6. To coat: Once the cheesecake is frozen, lift it out of the pan and gently peel away the foil. Using a sharp knife, cut the cheesecake into 36 squares. Place in the freezer until you’re ready to dip them.
  7. Melt the chocolate and coconut oil in the microwave or double-boiler until smooth. Place parchment paper on a baking sheet. Dip the squares, one at a time, in the chocolate. Let the excess drip off and place on the prepared sheet. Top with graham cracker crumbs, if using. Then refrigerate or freeze until the chocolate is set.
  8. Trim excess chocolate, if necessary, and serve cold. Store in the refrigerator or freezer in an airtight container.

One of my favorite things is a recipe that takes a food on its last leg and turns it into something amazing and delicious.

You know how banana bread rescues bananas from the trash can? This bread does the same for strawberries and peaches. The softer and riper they are, the better.

It’s great for a breakfast or snack, but my favorite is with a big scoop of vanilla ice cream. But then, ANYTHING with a big scoop of vanilla ice cream is likely to be my favorite.
 
Strawberry and Peach Cinnamon Bread

Makes 1 loaf or 3 mini-loaves or 1 dozen muffins

Ingredients
  • 1½ cups flour
  • 1 cup sugar
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • 2 eggs
  • ⅓ cup plain yogurt
  • ⅓ cup oil
  • 1 cup chopped and mashed strawberries and peaches (whatever ratio you have is fine – I usually pulse mine in the blender a couple of times to chop them).

Instructions
  1. Preheat oven to 350. Whisk together dry ingredients in a large mixing bowl. Add remaining ingredients and stir until just combined.
  2. Pour into greased pan (fill each pan or muffin tin about ⅔ full).
  3. Bake for 1 hour if doing a full loaf, 40 minutes for mini-loaves, and 30 minutes for muffins (or until a toothpick comes out cleanly).

You guys. That bowl of yogurt is my new obsesh. Yogurt, peaches, honey, toasted pine nuts. So glad I found that random half bag of pine nuts when I was cleaning out the pantry. Gold, I tell ya.

As you know, we’re in the thick of the moving process. While I’m eating random bowls of delicious yogurt and taping boxes shut/ripping them open again, you’ll get to enjoy more guest posts by my food blogging pals. I’m looking forward to getting settled and working on new content.

Until then, some Thursday things.

Can we all agree that popsicles are having a moment?

Maybe it’s the summer heat + all the gorgeous Pinterest inspiration, but I’ve had popsicles on the brain. When I saw a bag of ripe mangos in the Kroger dollar produce bin, my brain immediately said, “Popsicles. Probably with a yogurt swirl. Let’s do this.”

And here we are with mango swirl popsicles. Thank you, internal grocery store monologue.

Not much work to be done for these bad boys. Puree your mango with some lime juice, swirl with vanilla yogurt and freeze. Then try to forget they’re in the freezer for a few hours so you’re surprised when you remember you have popsicles waiting for you. I love knowing there’s a little treatsie in the freezer with my name on it, don’t you?

Mango Swirl Popsicles

This recipe will make 4-6 large popsicles or 8-12 small popsicles, depending on the size of your molds. There will be about 4 cups total of your popsicle mixture. Any extra is delicious eaten straight from a spoon!

Ingredients
  • 2 ripe mangos (makes about 2 cups puree)
  • juice of ½ lime
  • 2 cups plain yogurt (make homemade raw milk yogurt for GAPS or coconut yogurt for Dairy-Free/Vegan/Paleo)
  • 1 teaspoon vanilla extract (you can omit this if you’re using yogurt that’s already flavored with vanilla)
  • 1-2 tablespoons honey (optional)

Instructions
  1. Cut around the pit of your mango and scoop the flesh out of the skin and into a blender. Try to get as much of the mango flesh as possible off of the pit (this is easier when the mangos are really ripe, so look for soft ones). Add the lime juice and puree until smooth.
  2. In a medium bowl, mix your yogurt and vanilla extract (and honey, if using).
  3. Spoon the mango puree on top of the yogurt and gently fold the puree with just a few strokes. Try not to overmix- it will still taste great, but you’ll lose the “swirl” look if you mix it too much.
  4. Pour into popsicle molds. Freeze for about 30 minutes, add the sticks, and then freeze for 1-2 more hours or until firm.
  5. When ready to serve, run the molds under warm water until the popsicles come loose and serve immediately.

It’s Thanksgiving week- I couldn’t leave you hanging without something yummy to look at! Forget pies and turkeys and sides and all of that nonsense- you probably already have your big day game plan in place. I wanted to give you something to eat in the days before (or after) Turkey Day.
Chances are, you will need a snack to get you through the next few days. And hey- you might even have a half-open can of pumpkin puree that you need to use up. You can certainly eat this as a dessert, but it’s got no added sugar in it (unless you add some, that’s on you!). The sweetness comes from the cookies and you can add a little Stevia or honey if you like. It’s quick to whip up and even if you don’t have the gingersnaps, you could use just nuts, which would make it even better for you! You’re welcome.

Ingredients
  • 10 gluten-free gingersnap cookies (I used Mi-Del, feel free to use whatever brand you like)
  • 1-2 tablespoons coconut oil, melted
  • 1 cup pumpkin puree (fresh if you’ve got it)
  • 1 teaspoon pumpkin pie spice or ½ teaspoon cinnamon, ⅛ teaspoon cloves, ⅛ teaspoon ginger, ⅛ teaspoon nutmeg and ⅛ teaspoon allspice
  • 1 cup plain or vanilla greek yogurt (I used plain and added a few drops of vanilla Stevia liquid)
  • ¼ cup pecans or walnuts, chopped, plus more for topping

Instructions
  1. In a food processor or plastic baggie, crush the gingersnap cookies into crumbs. Put them into a small bowl and combine with the coconut oil. Put in the refrigerator or freezer while you assemble the parfaits.
  2. In a small bowl, combine the pumpkin and spices. If you want to sweeten your yogurt with Stevia or another sweetener, do so in another small bowl.
  3. To assemble: in each glass, put a layer of cookies, a layer of the pumpkin mixture, a layer of cookies and chopped nuts, and a layer of yogurt. Top with the last bits of the cookie mixture and more nuts if you’d like. Keep cool in the fridge until serving.

This new style of eating has been an adjustment. It’s hard to wrap my head around new rules for meal-planning and eating. So much of my day is spent thinking about food, and planning out when and what we’re going to eat and making grocery lists. I know it’s not permanent (I mean, I hope! Ack!) and I know it’s going to help to heal my stomach, but it is mentally draining.
This meal is one of my first attempts at branching out from the plain-meat-and-veg dinner. I am semi-obsessed with meatballs lately, so when I saw ground lamb at Publix I had to grab it. It was exxxxpensive, but it made delicious meatballs.
When I was combining the meatball mixture, I wasn’t sure they would come together without some kind of binder. I swore by panko or soaked bread in my old meatball recipes and that obviously wasn’t happening, so I grabbed some coconut flour- my new BFF. It’s basically magic, that stuff. It soaked up the extra moisture right away.
 To go along with the lamb, I made a quick yogurt dip in the food processor with mint and feta cheese. I hadn’t ever had the mint/feta combo, but it is surprisingly delicious. A little goes a long way for me (as usual when it comes to dips and sauces), but I’m a fan.
I also roasted up some cauliflower and carrots in spices that compliment the lamb- oregano, garlic, parsley.. as well as some cinnamon, cloves, allspice and a touch of cumin. You don’t have to add the “sweeter” spices, but I like the way they taste when paired with the lamb.
I had my meatballs and veggies over a salad; hubs made pita sandwiches. The kids gobbled up the veggies in no time. I feel like I finally had a win in the kitchen after weeks of scraping by.. not really knowing what to eat or serve my family. Huge sigh of relief!

 

Lamb Meatballs (gluten-free, grain-free, paleo) with Yogurt Dip and Spiced Vegetables

  • handful of parsley (maybe ¼-1/3 cup packed?)
  • 3 garlic cloves, peeled
  • 1 pound ground lamb
  • 1 egg
  • 2 tablespoons coconut flour
  • 1 tablespoon oregano
  • ½ teaspoon cinnamon
  • ⅛ teaspoon cloves cloves
  • salt and pepper to taste
  • Feta Yogurt Dip (below), Spiced Vegetables (below), pita bread, salad greens, etc for serving

Instructions
  1. Preheat the oven to 400 degrees.
  2. In the bowl of a food processor, combine onion, parsley and garlic. Process until finely diced.
  3. In a large mixing bowl, combine onion mixture, lamb, egg, coconut flour and spices until well combined. Form into meatballs and line up on a foil or parchment-lined baking sheet.
  4. Bake the meatballs at 400 degrees for 20-30 minutes or until lightly browned. Serve with feta yogurt dip, spiced vegetables, pita bread, or whatever you like. (If you’d like the meatballs to be even more brown, turn on the broiler for 5 minutes and them pull them out).

 

Feta Yogurt Dip

Ingredients
  • 4 ounces feta cheese
  • ⅓ cup yogurt, plus extra if you like a thinner dip
  • 2 sprigs fresh mint
  • 1 tablespoon red wine vinegar or fresh lemon juice

Instructions
  1. In a food processor, combine feta, yogurt, mint and vinegar/lemon juice. Process until smooth. If the dip isn’t smooth enough for you, add some more yogurt until you reach your desired consistency. Serve with the lamb meatballs.

 

Spice Roasted Cauliflower and Carrots

  • 1 head cauliflower, chopped into florets
  • 5-6 carrots, peeled and cut into chunks
  • 2-4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley or a few sprigs freshly chopped parsley
  • 1 teaspoon garlic powder or 2 fresh garlic cloves, minced
  • ½ teaspoon onion powder
  • ½ teaspoon cinnamon, optional
  • ¼ teaspoon cloves, optional
  • ¼ teaspoon allspice, optional
  • salt and pepper to taste

Instructions
  1. Preheat the oven to 400 degrees.
  2. In a mixing bowl, combine the vegetables, olive oil and spices. Spread on a foil or parchment-lined baking sheet and bake for 30-45 minutes until beginning to brown. Serve warm.

I know I just told you I’m supposed to be gluten-free and yes, spelt flour is not gluten-free. But fear not- I didn’t cheat! I was just the chef this time. That means that unfortunately, I didn’t get to taste these waffles. I can say with authority, though, that they look and smell delicious.
I got some samples from the lovely folks at Shiloh Farms a few months ago and with all of my dietary issues, I haven’t gotten around to trying them out. I was cleaning out my pantry this weekend and rather than throw out perfectly good flour, I thought I’d play around with a pancake and waffle mix that they sent out.
Since it’s fall and all, I thought a pumpkin adaptation would be perfect. I messed around a little bit with the package directions and came out with this gorgeous, golden looking waffles. The children promptly gobbled them, covered in yogurt and berries.
Shiloh Farms is a great resource for bulk foods online. Check them out! They’ve got all kinds of flours, salts, sugars, beans, spices, honey, nuts.. tons of stuff. My favorite items are the sprouted flours, though- I wish I could eat them! They provide all the benefits of soaking/breaking down the enzymes in our whole grains with none of the effort.
Even if you don’t have the Shiloh Farms waffle mix, you can substitute a similar sprouted mix or other waffle mix of your choice (or if you’re feeling adventurous, you can substitute spelt flour with a little salt and baking powder for the mix). Either way, these are a great way to start your morning.
I would have poured syrup all over them in the photos, but then I would have had to take a bite. I had to protect myself from all that delicious, wheaty goodness! It is seriously tempting.


Sprouted Spelt and Pumpkin Spice Waffles

Ingredients
  • 2 eggs
  • ¼ cup maple syrup
  • ¼ cup plain yogurt
  • ¼ cup pumpkin puree
  • 2 tablespoons melted coconut oil or butter
  • 1 cup water (or milk if you like)
  • 1 teaspoon vanilla extract
  • 11.5oz Sprouted Spelt Pancake and Waffle Mix (or an equal amount of another sprouted mix)
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon allspice
  • ⅛ teaspoon ground nutmeg

Instructions
  1. Preheat your waffle iron.
  2. In a large bowl, mix eggs, maple syrup, pumpkin puree, melted coconut oil or butter, water and vanilla extract. Whisk until will combined.
  3. Add the dry ingredients and spices to the liquid ingredients and mix until just combined.
  4. Rub waffle iron with oil or melted better. Follow directions on your waffle iron for proper cooking. (Each waffle took about ⅔ cup batter on my waffle iron and around 5 minutes to cook.) Serve with butter and syrup (or whatever you like).

You guys.
I am in the midst of an intense week of toddler-watching (we are caring for two extra little cuties this week while their parents are on vacay), so I have about 10 minutes to say my peace about these salmon cakes. Let’s cut to the chase:
1. They’re a great use of leftovers. As you can probably guess, the night before I made these, we had salmon with wild rice. There wasn’t enough salmon to repeat the whole meal for everyone, but making the salmon cakes transformed them into something new while using up what we already had. Refrigerator-0, Natalie-1.
2. They are kid-friendly. This is crazy, okay- I made the kids PIZZA last night, but they decided they wanted to eat these instead. What the what? Mind-boggling, really.
3. They’re great for packed lunches. They are portable, make-ahead and reheat well, too.
4. They’re nourishing. Wild salmon, wild rice.. it’s getting wild up in here. You’ve got good fats coming from the wild salmon, and the wild rice is a good source of fiber, folate, magnesium, phosphorus, manganese, zinc, Vitamin B6, and niacin. Add some spinach and avocado and things get even better. Take that, RDI!

Salmon and Wild Rice Cakes

Ingredients
  • ¼ large or ½ small onion, roughly chopped
  • 1 rib celery, roughly chopped
  • ¼ cup fresh parsley
  • 1 garlic clove, peeled
  • 2 cups pre-cooked wild rice (brown rice or any other cooked rice/grain can be substituted)
  • 12 oz wild salmon, pre-cooked (canned works also)
  • 2 tablespoons Greek yogurt (preferably full-fat)
  • 1 egg
  • 1-2 tablespoons lemon juice
  • sea salt and pepper to taste

Instructions
  1. In a food processor, add onion, celery, parsley and garlic. Process until finely chopped. Scrape down the sides of the bowl and add the rice. Pulse just a few times until the ingredients are combined- the rice should keep most of its shape (you aren’t making pureed rice).
  2. In a large bowl, combine the rice mixture, salmon, yogurt, egg and 1 tablespoon of the lemon juice. Mix well. If the mixture does not seem wet enough, add more lemon juice (or yogurt). Season the mixture with salt and pepper.
  3. Using a ⅓ cup measure, scoop out the mixture and form into patties (I got 10 patties with the ⅓ cup measure- use the ¼ cup if you would like more or smaller cakes). Place formed patties on a parchment-or-foil-lined cookie sheet and freeze until they firm up a bit, about 30 minutes.
  4. When the salmon cakes have firmed up, preheat the broiler on high. Place the oven rack about 10 inches below the element (in other words- don’t put it right under the broiler, give it some space). Broil for 10-15 minutes, or until golden brown and cooked through. Serve hot and enjoy!

I wish I had a separate freezer that I could dedicate to frozen treats.
Or maybe an ice cream cart right in my living room? Umbrella and all.
Sounds completely normal.I had to do some major freezer reorganizing last week- not due to popsicle excess (I wish!), but because we bought a 1/4 cow and that baby needed some space. I took out all of our ice packs, the ice cream machine insert, some old freezer burned stuff and a bag of frozen raspberries.As you can guess, those raspberries turned into popsicles and went right back into the freezer.
What can I say? I needed a reward for my hard work.

All I did for these pops was spin up the frozen raspberries in a food processor with a banana and a little bit of honey. You can add a bit of yogurt, too, if you like. We ate some of it straight out of the food processor- it was like sorbet and completely divine. So if you want to forgo the popsicle process all together, I don’t blame you. Why wait?
Now, if you’ll excuse me, I’m going to go google “living room ice cream cart” and “gourmet popsicle freezer.”

Ingredients
  • 1½ cups frozen raspberries
  • 1 banana (may or may not be frozen)
  • 1-3 tablespoons honey
  • a few spoonfuls of yogurt (optional)

Instructions
  1. In a food processor, combine raspberries and banana and puree until smooth. Add honey to taste and yogurt (if using) and puree to combine. Pour into popsicle molds and freeze until firm or eat right away (it will have the consistency of soft serve sherbet).
