Since he still can only eat really soft foods, I tried this recipe in my crockpot. It wasn’t quite as good as the original, but it was still pleasing to Chuck.

I couldn’t find catfish at that late hour and needed to use some very soft fish due to his dental problems, so I ended up using tilapia.
I cooked it exactly as you suggest (although I need to overcook his a bit to get it soft) and I thought it was SUPERB! My husband found it much too spicy, though. I am afraid he’s aging fast, LOL.
I certainly will make this again. It will make a nice dish when we have guests.
]]>Most of our catfish, I catch myself from the wild . . . it tastes much better than “farm-raised.”
Of course, we only eat the “blue” catfish. The “mud” or “yellow” catfish is not acceptable to either my wife or to me.
In our opinions, there are ONLY two ways to properly cook the delicately-flavored catfish: frying in a corn meal batter, and blackening.
Any other method of cooking is a waste of good catfish.
